Grilled Chicken and Rice Soup

Last weekend I decided to cook some chicken on my grill and as usual, I always make extra. This time I wanted to make a simple grilled chicken, using some basic ingredients. I began with bone-in breast and thighs, and seasoned them with salt, pepper and garlic. I then rubbed the chicken with olive oil and placed the meat on the grill. I cooked the meat until it was nice and golden and then finished the chicken in the oven.


After eating that evening, I put my leftover chicken in plastic bags and placed the chicken in my freezer for another day. A couple of days passed when I decided that a nice soup would be real good for lunch. I wanted something quick, but also very fresh and tasty. I removed my grilled chicken from the freezer and let it thaw.

For example, mix together broccoli and summer squash, or peas and carrots. The best method for outdoor grilling any meat is to control the temperature of the heat whether you are using an outdoor gas grill, charcoal grill or indoor stovetop grill. Time is another important factor.
